I am distilling an old tom gin with fresh fruit of raspberries, blackcurrants, pear with juniper, little coriander and some elderflower. It comes through not too bad but there's a sharpness after cutting back and the sweetness disappears very quickly. Would love some advice if anyine has any? Happy to post the recipe if that helps?
