  1. Thornton Distilling Company is hiring a new full-time Assistant Distiller to join our growing team! The Assistant Distiller will be involved in all aspects of production, including but not limited to, mashing, distillation, gauging and proofing, barreling, bottling, routine maintenance, copious note-taking and of course, cleaning. We focus mainly on single malt whisky, but the successful applicant will also assist in gin, bourbon, rum, absinthe, and bottled cocktail production. They may also be asked to represent the distillery for tours, events and off-site promotion.

    The successful candidate will ideally have commercial brewing or distilling experience and will work alongside the Head Distiller to make our spirits. The Assistant Distiller reports directly to the Head Distiller, though other senior roles may give direction at times.

    Duties and Responsibilities:

    • Know history and qualities of all of TDC spirits
    • Mashing/grain handling
    • Monitoring fermentations
    • Still operations
      • Stripping runs
      • Spirit runs
    • Spirit proofing and filtering
    • Barrel management
      • Filling
      • Dumping
      • Inventory and monitoring
      • Sampling
      • Prepping / Swelling
    • Maintain accurate records
      • Daily logs
      • Digital records
    • Inventory
      • Finished goods
      • Raw goods
      • Production supplies
    • Oversee bottling
      • Spirit prep/proofing/filtering
      • Bottling line set up/cleaning/breakdown
      • Supervise team during bottling
    • Warehouse Management
      • Cleaning, organizing
      • Prepare customer orders for shipping
    • Schedule or perform regular maintenance and cleaning
      • Addressing all maintenance issues quickly
    • Attend meetings and off-site events as required
    • Participate in giving tours and engaging with customers as required

    Skills and Specifications:

    • Must be 21 or over
    • Prior commercial brewing, distilling or winemaking experience strongly preferred
    • Must possess a valid driver’s license
    • Ability to lift 55 pounds
    • Ability to be on your feet for long hours
    • Broad knowledge of craft spirits, cocktails and beer
    • Experience with machinery including pumps, boilers and air compressor
    • Strong organization and record keeping
    • Unwavering commitment to safety
    • Ability to read and follow recipes with strict attention to detail
    • Ability to problem-solve, multitask and meet targets
    • Good time management and planning skills
    • Forklift certification a plus
