Hello Everyone,
My name is Jordan, formerly of Stillwater Spirits in Petaluma, CA. I have meet many of you over the years but I am now holed up in the Rockies making spirits for Breckenridge Distillery. We are entering our second phase and building a large barrel storage facility on the property. I have not met anyone who does design work for traditional ricks for barrel storage. Is there anyone out there that you know? Thank you for your help.

Try to make it if you can Dave, it would be good to see you. We have a nice golf course right here in Breckenridge, come on out Tuesday, bring you clubs, and we'll check out the distillery and go swing the crooked sticks together. Think about it. If not, I'm sure you'll make it next time, good luck with everything.

It's Jordan Via, I was the distiller at Stillwater Spirits until the end of last month. We are opening Breckenridge Distillery in Breckenridge Colorado about 2 hours west of Denver in summit county. We are about 90% complete but the place is starting to look like an actual distillery. Why don't you come on up and spend a day, I would love to show you around and we can finish our discussion on that liqueur project we talked about .

We just use a pump to recirculate it for awhile and then let it rest overnight.
I'm with Rich. Just clean your hoses well and hook a pump to your bottom most valve and "pump over" the top of the tank for a half an hour or so. Take readings from the top and bottom of the tank to check your mixture. Done.

Hey there HBD,
This is an old post so the original posters are probably not still following it. My name is Jordan I am the apprentice distiller at Stillwater Spirits in petaluma. We are still making a little barley shochu with the same vaccum still. Where are you starting up? Your projects sounds interesting, I am not familiar with baijiu production. Maybe we can trade ideas on what has worked in our respective productions.

Seems like an old post, but I'll reply anyway.WT,
We are a start-up in CA and we will be making baijiu and soju. Not exactly shochu, but similar since some shochu makers are diluting their product and re-labeling as soju. Big advantage in CA I guest because soju is sold as beer, forgoing the expensive retail liquor license and still selling a spirit.
As with all things, a little time and education about a product should bring it around to the mainstream audience. Our processes (Southeast Asains) are a little different than the Japanese.

Jordan here from Stillwater Spirits in Petaluma, CA. We received the same letter last week requesting a shirt from our inc. name, not our label. We have no shirts with this name. What can the scam possibly be? To collect as many free shirts as possible? Sounds to juvenile to be worth the expense.

I have had good luck with 'Nature's Flavors' natural food coloring. They make a green derived from honeydew melons that is very stable. You can add it as a flavoring in your formula submission and never mention it as a colorant, it's a flavoring agent that happens to turn your product green.
