  1. New York State is putting together a communal bottling facility near my distillery through grant funding. It would be shared with other local producers of beverages like syrups and non carbonated beverages.

    If anyone has experience they can share on manufactures, I would love to hear about it.

    I'm sure there will be TTB issues to sort out.

    We are looking for a high quality label printing company. We need hot foil stamping, high end paper and a print production manager that is attentive to detail. That said, we are trying to not pay at the top of the market either. We want the BMW of labels-- not the Lamborghini. Any suggestions would be appreciated!!

  3. Does anyone have recommendation for wax tops? We have been trying to make the polymer wax from Etched Images work. They have great colors and it shines nicely, but... We are getting bubbles from the expanding air under our plastic T-tops. And, the wax seems too thick. When I raise the temperature to thin the wax the t-tops melt. I have tried all their tips, putting tape over the joint between the bottle and t-top, adding a first layer of wax over the joint before dipping, higher and lower temps, quick dips and nothing seems to be easy. Perhaps this is all to labor intensive...

    If anyone has recommendations for a source of wax, could you let me know?

  4. I'm 90% of the way done with a control box using a BCS 462 to remotely (from the iPhone using BrewBuddy) monitor fermenting temps and watch temps in the still/condenser. I am using relays in the box to control mixers, valves and pumps from a central location. And yes, I have a big red cutoff switch. I am not attempting to control my steam boiler.

  5. Very interesting plans. Yes, glass columns have been around. I cut my teeth on distilling with a 30 foot tall glass column back in 1989 when working for a chemical engineering research company. We were making ultra pure hydrazine (rocket fuel component) for vapor-liqid equilibria studies. Talk about theoretical plates...

  6. My local building department, Beacon, NY, is giving me a hard time about storage in wood barrels. I have pointed them to the NY ICC code Chapter 27, 2701.1 where barrels and bottles less than 1.3 gallons are excluded, but they read this as only applying to control rooms.

    I am thinking I need a letter from an "expert" to support my F1 rating and excluding barrels and bottles from my MAQ. I am hoping someone knows who would be good to talk to about this issue. They want to be helpful, but only want to rely on NY Codes.

  7. I am happy to report that Denning's Point Distillery received approval for Class A-1 and Class D licenses. Of course the approval is contingent on getting the DSP (Application has been in for 69 days).

  8. I am developing a distillery in Beacon, NY. I have submitted the TTB DSP application and am working on the NY State paperwork now. I can't seem to get a straight answer on if I need to have the TTB DSP license in hand before submitting the NYS license application.

    If anyone has found a good contact at the State, could you share it?
