After more thought and reading the posts we will up the fermentors to 3 so there will be Wash always ready for the Stills. as well we can always scale up - the big thing is to get the doors open and pass all the Fire Regs.

60 gallons Max ouch that is pretty small.

We are looking for Electric heat as a Steam Boiler is not in the cards and is not needed for the size of system we want.

Looking for direction

My thought:

80 gallon Mashtun with Electric Heat (no open flame allowed).

80 gallon Fermenter

80 gallon Storage tanks

of course over time we will scale up as needed.

We are looking at the Istill 250 and the Istill 50 Visual

Great forum have been reading for some time joined today. Have a Liquor Agency in Canada and would like to build a Micro Distillery in Vancouver, BC they are finally legal to do so - Pretty tired of paying suppliers for way overpriced spirits that are not very good - my main focus would be a Vodka, Gin, White Rum and a Moonshine, of course would venture into 2 at the beginning -Thanks to all of the great information on this forum - impressive.
