  1. Great question. We were way behind on excise taxes.  TTBs audit in 2016 required we catch up,. We couldn't until 2018 and they went against our bond.  Which covered all alcohol in bond.   Although the I have another bond for the new location we moved to and even thought they collected.  They still required that I hold the new Bond which we still are.

    i started my distillery back in 2010 and closed it 2019.  I still have 10 yr cane rum aged in used bourbon barrels from jack Daniels or Sazarac.

    There are about 12 barrels of 100 proof left.   I paid taxi at 13.50/g for them so they are ready to go..  They are TTB audited and verified back in 2016.   Top notch quality and taste.  Selling with wood barrel that was stored in since 2010.   Asking  $1850 firm per barrel (50gal of 100 proof).

  4. I clearly remember reading +/- .2 % of volume. Now i cant find it for you.. if u have a gravity filler like we do, you're hoping its shutting vacuum at right level and all nozzles are producing same repeatabilty against itself and also gauged against your other 8 or 12 heads. Its a tricky balance and as long as you do you part to maintain record of QC, you should be fine even with minute deviations along the way.

  5. Due to this being a follow-up to a past post, I wanted to provide this in a new post so all interested parties may see how/if this will affect them. So I believe I have a final word from the TTB on the "White Whiskey" labeling issue. Basically, here goes, if you use the word "white" or "white dog" or anything that has "white," in conjunction with "whisk(e)y," you can put it on the front label. However, "white dog" (or white or white whatever) may not appear in close proximity with the class and type disignation "whiskey." Furthermore, and I quote, "the product is not allowed to be classified as a 'whiskey' if the product is unaged UNLESS it is a corn whisky" (I hope by now we all know what a corn whisky is). If the product fits the standard of identity for "corn whisky," than it must be so designated on the label, which I understand as meaning that if you are talking about an UNAGED, CORN whiskey, you MUST label it with the designator of "corn," as opposed to simply "whiskey." This came directly from the director of formulation for ALFD. So, if you don't like it, disagree, or believe it to be untrue, there ya go. Does this mean that all "white whiskey" products are going to be forced to change their labels? Maybe eventually, maybe never, but I would mentally prepare myself that any unaged, whiskies that are not "corn whiskey" products may come to be forced to be labeled as "spirits distilled from grain," or something close to that. Finally, if you have "white" on the front label in "close proximity" to the word "whiskey," you may have to change that as well.

    Just a very general question , please answer if you feel up to it, I am just looking for some data points.

    We opened our distillery about 13 years ago, and regulations were very different than they are now. I was just curious, how long did it take you to get your distillery up and running. From the time you first put pen to paper, till you received your final basic federal permit.

    Any information is greatly appreciated. The information is just for personal curiosity and will not be used in any type of publication, just fyi.

    glad you asked.. And so happy to see people that started years ago when regulations were just safety in mind. Now they are blown out of proportion. From city codes, to fire and everyone in between.. It used to be electrical did the building wiring and you connecting your filling line or other machines to it, now they think they can dictate ( and do) tell you how you can connect things, explosion proof the facility, ventilate the neighborhood, and instill outrageous rules and regulations that can only make sense to insurance agents and their cousins.

    it took us 18 months to get going and We thought TTB was a stickler, then We thought the state was just as bad, until we came across the city inspectors and their "CODE BOOKS"!!! The book that has so much black and white and sections going back and forth and referencing each other that interpretation can only be left the the individual inspector and city. So you can face strict regulation that can and will put you out of business in a year or two, or they have enough common sense to recognize small businesses are the heart of any economic growth and we pay their salaries with our taxes and they have an obligation to us to but us in a position to prosper.

    I feel many new distilleries will go under and unfortunately the regulations are such that it makes it very difficult to start with a small budget and low overhead as codes and regulations create too much up front cost just to get the C of O and operate..

    All the best to our growing distilling community and thanks Dave for the opportunity to vent against all those lobbyists that are stifling our small businesses.

  7. I *may* have 15 pallets or so of bottles available for sale. The bottles will be a similar style to Stoli (750 ml), but with a bar top finish, rather than screw cap. The bottles WILL ALREADY BE IN KRAFT BOXES. Closures can also be arranged. The minimum order is a pallet (about 100 cases). The price, without shipping from Seattle, would be around $1 a bottle, and this includes the cardboard case. Anyone interested???

    I am wondering what electrical codes and classifications has your facility or specially your filling line subject to?

    My city officials are considering this Vodka or spirits filling line as Class I, Division I. SO all electrical within the 3 feet must be explosion proof and sealed.. and all equipment within 10 feet of that unit must be 18 inches off the ground (that produce electricity).

    any ideas or comments from your own experience is much appreciated..

    I had the exact same issues.. he resolved them.. the inspection can and WILL read the codes wrong.. be very careful of what they confine you to!!!

  11. Being that powdered carbon is such a darn mess, has anyone ever tried Carbac filter sheets?

    One of my suppliers mentioned it to me and I'd like to give it a go.

    i cant believe u wasted your money on that gimmick. lol..

    you need contact time.. 24 hrs is plenty with vibratory excitement on occasion.. So get a nice stainless steel tank.. perforated bottom to catch granules and let it soak in the GAC. coming out is another problem in itself.. you need another filteration process to capture the dust as they always come through..

    We each have our own techniques of polishing that old vodka and our own process seems to be the secret key ingredient that has make your vodka smoother than water.. Even Coke is dying to steel it and put it in that secret vault that houses the special ingredients. Yet, as long as we have some good contact time with the carbon, we should produce an odorless and clean vodka.. Yes, each batch varies and through the cycle of the carbon, consistency will gradually be lost until we reactivate the carbons again.

    I thought we all can share with our other fellow distillers, some educational notes to see what we each do to improve our quality of the vodka..

    I would love to hear others and their methods and the results they achieve..

  13. Hi Guys- I have some very simple questions that I just can't seem to find the answers to. Any help or thoughts would be appreciated.

    Let's say I have a tank full of distilled high proof ethanol that I now need to dilute with water down to 80 proof. My questions are:

    Question #1: How do I pump/transfer the ethanol into a mixing tank? (Preferably without blowing up.)

    Question #2: How do I know how much ethanol I have pumped from Tank A into Tank B?

    These seem like they should be such simple questions but so far I haven't found any answers. Thanks again.

    HI... great question..

    I know they sort of force you into an explosion proof stainless steel pump (they being fire department). Having said that, you could mortage your house for one of these but since housing market is in slumps, you may not be so lucky.. I am using a regular sanitary transfer pump.. 125 bucks on Ebay.

    to control your ratio.. You will need a liquid batch controller.. this includes a flowmeter, valve and controller.. In your case two valves and 2 flow meters.
