Jesse Posted July 12, 2013 Share Posted July 12, 2013 I've searched the forums and have found some related info, but some of the posts are years old and I'm curious what you are using for proofing. I've seen recommendations about both glass and digital thermometers, but the CFR doesn't seem to mention digital as an option. Also, the thermometers I've found online seem to have a very wide range and the CFR calls for a 40 degree to 100 degree range. Any input, recommendations, or advice would be much appreciated! Rich Morgan Posted July 13, 2013 Share Posted July 13, 2013 We have a glass calibrated 'reference' thermometer in the lab, locked up safe. We then use medium price electronic 'multimeter' style thermometers with external K type thermocouple stainless probes. Rugged as hell, easily calibrated from the master, easy to read.
