    What’s a Wassail?
    Wassailing is an Old World countryside tradition.
    It is a post-harvest thanksgiving, incorporating pagan and Christian elements.
    Ours is based on the cider-country traditions of Herefordshire, England.
    wassail: noun, intransitive verb. From Anglo-Saxon was hail – ‘be healthy’
    The Wassail SongOh apple tree, we’ll wassail thee in hope that thou will bear.
    Only the Lord does know where we shall be to be merry another year.
    To blow well and to bear well, and so merry let us be.
    Let every man drink up his cup, here’s health to the old apple tree.
    Apples now –
    Hats full, caps full, three bushel bags full,
    Barrels full, barn floors full,
    Even a little heap under the stair.
    Hip, Hip, Hooray! Hip, Hip, Hooray! Hip, Hip, Hooray!
    So here’s to thee, oh apple tree.
    Be sure thee bud, be sure the bow and bring forth apples.
    Hats full, caps full three bushel bags full.
