I would advise on stabilising your g/litre as the amount in the boiler before distillation.
For example, I macerate at 50% ABV.
I look for 33-38g ingredients per litre, at 35% ABV, the strength I distill at. Depends on the type of gin.
Also bear in mind that some botanicals are not as flavour concentrated, so you need to use more.So when macerating at 50%, I use 43% more ingredients per litre.
Example:
51.1 g/litre, 50% ABV
When diluted to 35% this would be:
35.8 g/litre

If you are taking the "artisan" approach then forget diluting with NGS after distilling.
Single shot only. Only add water to dilute.
And don't make the same assumption I made - that you can up the ABV in the boiler to 50% to increase yield.
30% to 35% max. Flavour profile will be rubbish at 50%.
And don't get greedy with the tails. You can always recycle the ethanol in the tails in a reflux still.

However, minimum order is £500. Juniper and coriander are supplied as 25kg minimum.
That will create a lot of gin. Probably best to use a smaller supplier until you reach volume.
