  1. I certainly am not the Grammar Police, far from it. But, I may be one of those who do the "correcting". Agreed, it is language and language is ever changing. When folks come through, I only mention to them that, as I understand it, the TTB may prefer the item be called GNS. And there are enough differences in how the applications interpreted by individuals, that at least one thing can evidence a little homework has been done. Identifying specie being first, Grain Neutral Spirit, Cane Neutral Spirit, Grape Neutral Spirit. Think how this sounds.."Neutral Grain Spirit made from Cane". Also, I hope people know Wikipedia is a collaborative site, created and edited by contributors. A good start, but I always get confirmation on info gathered from it.

  2. Reads like you may need to visit the MASS.GOV/ABCC site to look at the licenses to see what they allow you to do. You need a license to distill. Getting a license from the Commonwealth won't take long after you have your Federal DSP. Maybe you can call and get the preliminary work done. Field inspection, etc. I would not distill without it. Is it worth the risk to upset the ABCC? They are good people and work for you. Besides you would not sell anyway until you get your TTB packaging approvals. Good luck and have fun.

  3. Would you want to track the store and related sales separate from your distillery? It seems the margins for the store items would unreasonabley inflate the distillery operation. So treat your store as a customer and let it have its own set of books.

  4. Maschmeier, several good threads on the subject here in the "Search" aspect. 1 million BTU's? You're really going to town aren't you. I reccommend do not go cheap and look for a good water pre-filterd. Good luck.

  5. Where are the accounting majors? Please do not confuse your business plan with your capital expense budget accompanied with your operating budget. Budget is a tool for your plan. 2x as a blanket may seem incredable, but can be correct. In a past life, charged to analyze fin stats, I would often ask and assist to rewrite plans and projection documents to help raise awareness. In this industry, I would look at each line item and qualify an unexpectied increase. EX: Your cost for a still is not going to "Double", you should know what that will be, so why treat that expense as such. But, your expense to install will increase (with drama). Line by line I would assess and extend an acceptable increase. Itemize your lab equipment expense, calibrated hydrometers etc, then add 50%. Office set-up and supplies, you get tempted to purchase volume for discount. A big warning when applying this process, Freight and Shipping! That is an example of the cost which raises your overall budget by such a large expense. On & On.

  6. Ralph, we are so happy to hear the event was more visual than destructive. Just to put it out there, for the newer forum members especially, I hope all understand that an event can happen no matter how much written protocal is in place. That it happened at Tuthilltown shows us we all can be more diligent. If you know the ownership of Tuthilltown you will not assume this is another case of a relaxed or over aggressive process situation or "rolling the dice" with safety. Anyone who has a passion for climbing mountains on a vertical plane, such as Ralph does, is certainly familiar with the principal of "risk/reward". Good luck!

  7. Saaz, from reading your initial post it seems you own the first building. Be sure when you get your variance to not have it narrowed or specific to distillery use. Plan on what you will do with the building in the future. Also, easy to say from here, Manufacture without sales is odd.

At my first ADI conference one of the speakers, a gent from Labrot & Graham, gave a presentation on the reserch being done by the big producers on trying to understand/replace the aging process of Oak & time. I would understand his presentation much better now than then. If anyone were interested would it not be they, who spent the money on millions of these barrels? Yes, I believe several of those distilleries have 1.5+ million barrels.
