    Having forecasted a shortage in wood, and an increase in demand, we took the initiative to prepare

    We are currently taking on a limited number of new customers, as our capacity has recently increased

    Investments in new machinery, wood sourcing, and new leadership in the cooperage have all contributed to this

    Currently we have 2 pallets (36/pallet) 10 gal char #3, and 3 pallets (60/pallet) 5 gallon char #3 in stock

    The barrels are all 2 year air dried American white oak

  3. The spirits industry is slowly, but surely catching up to the wine industry in product innovation/technology

    There have been many blind taste tests where wine aged with oak alternatives including our product- the oak infusion spiral- won best of show, double gold etc. over wines aged for one-two years in new French oak cooperage

    so 6 weeks with French infusion spiral ($55)beat out wine aged in new F/O barrels ($1000)for 1-2 years

    In fact- the majority of wineries now use oak alternatives to some extent- you just wont get the winemakers to talk about their technique

    Over the past 10 years the idea is becoming less taboo, and now you can read many articles in wine business monthly, and wines and vines on this topic

    Small barrels are not used commercially in the wine business, or in 99% of the spirits industry- this is due to economies of scale and competition

    I can go to the liquor store and buy a $25 1.75 liter bottle of bourbon from the big boys

    We have sold many 15 gallon and 30 gallon charred barrels to MAJOR distilleries in KY- I wont say which ones because I would like to continue working with them

    Bottom line-

    I think for some folks 53's is the way to go, and for others, smaller cooperage make more sense

    Really depends on your business plan, cash flow, time (ROI), desired flavor profiles, etc

    Gonna stay outta this one from here out, obviously I have a bias

    I guess "as good or better" is impossible without tasting the same spirit being subjected to different barrels, but as far as simply "good," I think the Tuthiltown (Hudson) stuff is aged in small barrels, and I quite like their stuff. There's also a guy in Madison (Old Sugar Distillery) who had put out some nice rum from smaller barrels. These two are the extent of my experience with small barrels, which is why I'm looking for opinions. I'll put a check in the "big" column.

    Robert-

    -your company does not make small barrels, only commodities like 53's and chips

    -Doubt if you realized that a 30 gallon barrel is 30" tall, while a 53 is 35", hence the greater surface area to volume ratio using smaller cooperage, it is exponential

    -Most craft/artisan distillers prefer top of the line ingredients- even organic, and the very best oak for aging

    -Would recommend the Sales section of the forum to promote your chips

    -"an intent to start a distillery" does not qualify you on this subject

    -I'll let the experienced distillers comment on the question from the gentleman in WI

    We are not your grandfathers cooperage

    Colors only available in Qty's 10+ otherwise will be BLK

    Available in 10/15/30/53-59 gal sizes

    2 barrels per rack, they say not to stack higher that 3- (6 barrels), he he

    Basically it comes to 90-100$ per unit including shipping

    I have been approached a few times by people looking for open top 300 gallon oak fermenting tanks

    We considered making them, but have decided to stick with what we know best...barrels

    After our inventory was recently dwindled (thank you!), we are now making a run of 15 gal charred barrels

    For orders of 10+ you can customise your char level 3/4/5 ...4 being our standard

    We also have a good inventory of 5 and 30 gallon barrels in stock
