Jacob Posted September 23, 2022 Posted September 23, 2022 Hello all, Im running a small whisky distillery in the Outer Hebrides of Scotland, North Uist Distillery. We want to create an island style spirit, using primarily heritage malts. We will be growing and malting a significant proportion our malt on the island, currently Bere barley but in the future other heritage grains. Fermentation will use brewers yeast and open top wooden fermenters for a range of fermentation times between 100-140hrs. Im looking at sourcing about 300 once used bourbon barrels per year. Does anyone have any suggestions of small bourbon producers doing interesting things, who might be interested in by-passing big cooperages and supplying casks direct? Thanks in advance.
