nabtastic Posted August 10, 2017 Share Posted August 10, 2017 Has anybody had definitive experience with Leuconostoc? i'm reading "introduction to sugarcane techonology" and it references Leuconostoc as a common infection that causes a slime or jelly-like build up. Silk City Distillers Posted August 10, 2017 Share Posted August 10, 2017 I love the funk, but that's not a common one. Ropiness and slime in fermentation is also common with Pediococcus. In fact, nearly always in brewing settings. The wild card, as you say, is the sugarcane. Leuc. is found in vegetative settings.
