  1. Spirit of Texas has received a federal permit. Sent in the paperwork Dec 18, 2009 and received the permit March 22, 2010. Self filed.

    It is not an easy process, but really shows what is important to get approved. The ability to provide tax money!!

    For those of us that are about to file, could you please tell us what the more difficult parts of the process were? Did anything hold up your paperwork? Were you inspected?

  2. i was wondering if when using active carbon for filtering product how much loss if any will be lost to not being able to get all the. Product out of the carbon? Thanks Seth

    I loose about 6%. Using 1.7 liters carbon cleans up 4 gallons really well; and 5.5 gallons fairly well. Most sources advise one to dilute the product down to 40% - 60% ABV before filtering. I don't dilute, but instead run it through at 90%+. Let the carbon absorb water for at least 12 hours (it expands). Fill the filter with wet carbon keeping it wet the whole time.

    After pouring the alcohol in the top of the filter, one can tell exactly where the alcohol is in the filter; because the alcohol creates heat where it meets the water. This way you can tell when the water is almost clear of the filter and when you should begin to collect the spirit. As the last of the alcohol absorbs at the top of the filter, add water (4 cups in my case) to push out the remaining alcohol. When this 4 cups is gone stop the filter: this is your spirit. Finish by collecting anything that will drip out and add to later runs through the still.

    Rinse the carbon in hot water, then boil and drain. Dry carbon. Bake at 550 derees F for at least 4 hours or until bad smell goes away. Good ventilation is necessary as the fumes are toxic. Carbon can be reused hundreds of times.

    I know this is a shot in the dark and the odds are "slim to none", but is there anyone who is willing to share their Business Plan for a small Whiskey Distillation operation with me? Bill has been kind enough to provide me with the spreadsheets, which are fantastic... it is just daunting to think of all the writing I need to do! I am not looking to copy someones plan verbatim... just looking for some language and a framework to get started. Or, does anyone know of a freelancer that can help with the writing? So, if there is someone out there that is willing to give a "newbie" an extra nudge in the right direction, any and all feedback, templates, etc. are sincerely appreciated. I am enthusiastic to have become a member of the ADI (today) and look forward to sharing intellectual capital with you...

    I got the book, "Anatomy of a Business Plan". I find it like an exercise in running a business. I found so much useful information that I had not considered and it gave me so much to think about. Now I feel like I'm ready to run a business.

  4. Ask them to pack the bottles neck down in the cases so when you get them you only need to flip box over and get 12 bottles standing-up right away

    (save time and energy)

    So the bottles are clean when they arrive...no washing needed?

  6. I have just begun the licensing process to open a distillery. It looks as though I will be Wisconsin’s 7th distillery. I have kicked around so many names for this business, many that I really liked and that so many of my friends hated. I would like your opinion on my current title: “North Woods Spirits”. This area of Wisconsin is often referred to as the North Woods. Please let me know what you think, Thanks.
