Can someone explain the the distilling, redistilling & distribution of heads, hearts & tails in this process? Or can anyone recommend a book or an avenue to learn the process?

The New Midleton method was to be able replicate the three distilleries that formed Irish Distiller’s namely Jameson (Bow Street), Powers (johns Lane) and Cork Distilleries Company (Old Midleton).  It was mostly based on the design of the Power’s Johns Lane distillery in Dublin.  Check out Fionnan O’Connor’s book A Glass Apart for more details.
