Chris Middleton on the History of Wood Distillation in America

Recommended Posts

You can't beat the way an old wood still rides.

Nobody wants to hear it, but you can distill great whiskey in a rusty steel drum with a column full of nails, so really, wood seems just fine.

After a few runs, the wood is going to be thoroughly inert, no extractables, it's just a container at that point.  Cellulose vs. Copper.  Everything up until that point is far more important.
