mendodistilling
I’m considering my options for the best direct path cookers for corn. Live steam cookers with cooking coils by vendor seem to be good options but what are the pros and cons you guys have experienced? What other equipment is required and what other manufacturers make as good or better equipment and in your experience, why?
indyspirits
We have a steam jacket and external tube-in-tube (think 40' copper liebig) cooler. Were I to do it again I'd strongly consider direct steam injection and use the jacket for cooling.
Southernhighlander
We have direct steam injection mash cookers with cooling jackets and insulation jackets over the cooling jackets or an internal cooling coil and insulation jacket can be used. We have many great references and you can visit distilleries with our equipment in operation.
