I've noticed a few distilleries have mentioned their named stills on their webpage and was curious if this is commonplace/tradition? I would think it would be (I certainly plan on doing so when I get up and running) but hey, could just be me. For those of you who have named your still would you mind sharing the name and how you came to pick it?

I am curious if anyone here uses wooden fermentation tanks. Specifically Im curious how they are for fermenting things other than grain, such as fruit/ molasses and such. What is the preferred method of cleaning/sterilizing wooden tanks? Finally for those who use wooden tanks how do you like them overall? Would you recommend them or if you were in a position to do so would you go SS?

I've been a lurker on this site for some time and figured it was time to join and actually participant. By trade I am a second generation beekeeper and I'm currently looking into opening up a commercial distillery in Sacramento, CA. Well I should clarify, I've decided that's what I'm going to. While I'm early in the process I anticipate utilizing honey in my products as well as taking full advantage of my agricultural network. -Frank
