  1. We have been using Superstart™ Instant Dry Yeast from White Labs. Our mash is rye. Looking for more sources of this yeast in the 20 kilo bags. White Labs ran out recently for three weeks. What other yeast are being used?

MALL DISTILLER LICENSE H.B. 5925 (H-1): FLOOR SUMMARY [Please see the PDF version of this analysis, if available, to view this image.] House Bill 5925 (Substitute H-1 as reported without amendment) Sponsor: Representative Barb Byrum House Committee: Regulatory Reform Senate Committee: Economic Development and Regulatory Reform CONTENT The bill would amend the Michigan Liquor Control Code to do all of the following: -- Require the Liquor Control Commission to issue a small distiller license to an applicant who annually manufactured not more than 60,000 gallons of spirits and paid a $100 license fee. -- Allow a small distiller to sell spirits at retail from its licensed premises for consumption either on or off the premises. -- Allow a small distiller to offer samplings or tastings on the licensed premises. -- Require a small distiller to comply with server training requirements. The bill would not allow the sale of spirits transacted or caused to be transacted by means of any mail order, internet, telephone, computer, device, or other electronic means. MCL 436.1111 et al. Legislative Analyst: Patrick Affholter FISCAL IMPACT The bill would permit eligible small distillers to obtain a small distillers license at a fee of $100 per year, a reduction from the current fee of $1,000 per year for distillers. The potential reduction in revenue is estimated to be approximately $5,000 per year. The revenue from all nonretail license fees collected by the Liquor Control Commission goes to the Michigan Grape and Wine Industry Council. This revenue totaled $517,233 in FY 2006-07.   6. What type of a drying agent do you use and what % alcohol are you at? Thanks for the great topic
  7. We are using a Sawa alcohol pump we purchased from Holstein. The cost was not inexpensive but we love it. Use it everyday and hard to think what we would do without it. Hooked it up to a control made by Altivar so we can control the flow rate from 2 gallons/min to about 10 gal/min. Very helpful for filtering. Let me know if you want more specific information. Kent
  8. For vodka on our final distillation we cut to tails at around 2% drop, you can notice a difference in the taste at this point. Whiskey around the also. For beer stripping we cut to tails at around 35%. All tails are gathered and when we have enough for a full kettle we run them once then. Hope that helps. Kent
  9. We use a 2% sodium hydroide then follow up with a 3% acid wash, good rinse then distill.
  10. We also use Federal Express, thet require a signature on each end of the shippment by someone older than 21 years of age. Process to set up is a bit of a pain but easy to ship once everything is in place. Kent
