  2. We have an old stainless steel jacketed tank we bought some time ago that has some rust in it. We're hoping to use it as the base of a pot still. I've tried Bar Keeper's Friend, and a rust removing gel and both have helped but I still can't remove all the rust. The photo shows the bottom of the pot.

    First, any other ideas on removing the rust?

    Second, is it usable? What would happen it we ran it with the rust in it?

  3. Does the tasting room and distillery have their own separate, clearly marked entrances on the drawings you submitted to TTB? You shouldn't have a problem as you describe as long as you meet that requirement. Ask them to cite in the CFR regulations exactly the rule you are breaking.

  4. Knox Whiskey Works, located in downtown Knoxville, TN is looking for a head distiller. We are a new distillery opening late Summer 2015 with a strong focus on locally-sourced, high quality ingredients. We will be representing the best of East Tennessee through our spirits from heirloom corn whiskey to local, collaboratively-developed spirits.

    The head distiller needs to be able to develop, produce and manage our whiskey production, and bring innovation and creativity to our specialty, experimental spirit line. The head distiller will have the full support of our managers and staff. We are the first distillery in Knoxville in over 100 years and we need someone who wants to take on the challenges of a new small distillery.

    Responsibilities include:

    • All distillery operations including mashing through distillation, TTB reporting, record keeping, and maintenance and cleaning.
    • Representing our distillery locally and nationwide

    Requirements:

    • Previous distillery, winery or brewery experience. Willing to train the right candidate, through external distilling classes, who possess a strong willingness to learn and understand the technical details of spirit development and production.
    • Multi-tasking abilities and able to work in a small team in a tight environment
    • Decisive and able to lead and teach staff
    • Strong attention to detail
    • Great attitude with the ability to bounce back from failures
    • A creative mind who wants to expand and redefine spirits

    Strongly desired:

    • Previous whiskey production experience
    • Understanding of mechanical equipment in distillery environment
    • Must be prepared to work longs days when needed
    • Refined palate

  5. We have four 3bbl stainless steel, conical bottom fermenters for sale (no jacket). Only one has been barely used, the rest are new but we can't use them in our current setup. We bought them from Bubba's Barrels some time ago and can offer a significant discount over new and with zero lead time.

    We also have a 100 gallon mash tun with false bottom and clean out port and motor mount. We also made a 100 gallon custom finishing still from the same tanks.

    We're located in Knoxville TN and these are all ready for immediate pickup.

  6. We decided to go the fluid heater route instead of steam but not because we believed it would be more efficient. Our main purpose was to get away from having a costly boiler room and inspections especially since we're in a small space. We have a glycol/water electric heater that can sit on a skid next to the still and isn't a pressurized vessel, so no inspections and no additional space required for probably similar price to a boiler.

    But since we're not running yet I can't say how good or bad it all works.

  7. I'll add one more. Rusty has a great, well-rounded class that hits on all the main details of starting your own distillery at a very reasonable cost. Two of the other instructors that he's brought in to help teach have also provided valuable advice for free after the class.
