I've worked in several breweries and wineries with CO2 monitoring, and none of them were working 6 months into the projects: mostly doe to being disabled by workers who felt they were too sensitive. My best advice is always assume that fermentation over night has displaced the air in the building and open a door and finish your morning coffee outside while the CO2 spills out.
