  1. We are having a problem which has left me scratching my head a bit. The fores, heads, and early parts of the heart are coming over with a pale greenish/yellow tint. It starts most intense at the heads and generally lessens as the run goes on. It looks different than the copper contamination I've seen from other stills, there isn't any blueish and shades more towards yellow. We've done 6 distillations of wine and it has happened the same way each time. We are distilling a 14% abv red wine made from Syrah, the wine has no added SO2 and doesn't present as flawed (no obvious VA,brett, infections). Wine pH is ~3.8 We are running a 4 plate Kothe still; it has a copper boiler, stainless column with copper plates and dephleg, and a stainless steel condenser. The lyne arm to condenser is stainless and has an upward J, so liquid generally drains back to dephleg and not condenser. It is heated very slowly via bain marie and no wine generally boils/foams into the plates. We generally distill brandy in a single pass, using the plates and dephleg with a heads cut from 182 to 175, adjust dephleg down and a hearts cut 165-145. The still is cleaned with 80C water after every distillation and receives a citric acid rinse generally when we switch between products or the copper is looking tired. We've distilled probably 300+ runs of wine on this still without encountering this. I've tried degassing the wine to remove co2, which didn't change anything. I gave the still a through cleaning & citric acid treatment, as well as dissembling the lyne arm to look for corrosion or debris but it looked clean. Adding baking soda to the diluted greenish fraction doesn't alter the color, but after a period of time it appears some of the green drops out and the fraction is clearer when decanted. Today I am going to redistill the greenish portion as well as try filtering it through a .25 micron filter to see what happens but I would appreciate some theories on what's going on.
  2. Hey all, I've been running a 150 gal pot still, soon upgrading to a 300gal. Whenever I have down time I find myself on here trying to further educate myself. When putting a product into a barrel, I'm reading that a bit of heads and or tails helps with the chemistry or the full flavor of a barreled spirit. I fill mainly 53's thus many years of maturation. It takes me 3x 300gal ferments to fill +/- a 53gal barrel. I do my cuts in 5 gal Korny Kegs. I then make my hearts cut, filter and cut to X proof (right now rye at 113p) and fill the barrel. My hearts cut is clean and if heads or tails are present I usually don't add em. Clear it taste fantastic. In your opinion how much heads/tails would you include in your cut? Is this adding to the mouthfeel, more flavor depth or what? If there are any links or books I could further educate myself with please include them. Thanks everyone, y'all rock!
  3. There was never a clear document or direction on what do with the heads distillate. From the obvious re-distillation which in my opinion doesn't produce good results, to burning and disposing of them.   4. I use pot still to make distillation . Head finished 83%, hearts 79% end. How could you get lower degree than I collected by using flute still. I dont get it, could you answer me... My Calculation cuts: %14 head, %65 hearts ex:7:25 chapter: Thanks...

  6. We have a simple suggestion for utilizing your heads and tails from your whiskey or other spirit runs. These can be re-distilled in our automated GENIO still, which will give you above 190 proof neutral spirit for subsequent use for vodkas or gins. Our stills come with an activated carbon filter and you can select to automatically pass your re-distilled spirit through the filter to remove further smell and flavor from it. Our GENIO Still 250 (66 gallons) is only about USD $10.1K and shipping to anywhere in the US or Canada is $1.3K, so for about $11.4K you can have a standalone plug and play automated distillation system that can produce on average 10L of above 190 proof neutral spirit per hour. With average electrical power use of 10kW per hour, it will be about 1kWh of electricity cost per liter of 190 proof of spirit. In the US, average kWh costs $0.12, so for $0.45 you can have a gallon of 190 proof neutral spirit, which is likely significantly less than purchased NGS from industrial sources and it would also be made from your ingredients, therefore still "Artisan" and not pretend "Artisan" like NGS is generally considered. Since you already have heads and tails, you might as well use them for something useful as opposed to disposing of it (in a safe manner of course). Our stills have a small footprint, are efficient, affordable and also automated using touchscreen controls therefore other than pouring your heads and tails into the pot and diluting it to less than 60 proof, you don't need to watch over it to ensure it hits 190 proof. Great addition to any existing copper whiskey still or a great standalone workhorse for any distillery. You can also make whiskey, gin, rum and any other spirit you want with it, but its competitive advantage is the automated feature in reaching 190 proof. It comes with a GIN basket, which will also save you time from cleaning your other still's column from juniper oils if you want to have this as your standalone Neutral spirit still and Gin still.
