  2. We are working on recipes and a local supplier of Rye has great rye, but it isn't malted. What will be the main difference between malted Rye and unmalted rye? Newbie question i know, but it's the first time working with Rye. Thanks
  3. This might be a stupid question, but what type of corn should someone stay away from. We will be trying out a million different mash bills and I want to R&D without spending a fortune on corn and when we have our bill that we like, then upgrade the quality of the ingredients. thanks J

  6. I'm looking for run times according to column size. 100gal boiler running a 4 inch column would run x time slower than a 100 gal with an 8 inch column? Ballpark figures works for me. Thanks

  14. If you are thinking of upgrading stills to something bigger, we could be interested in any stills 100-250gal. Ideally Vendome, but we're looking for used so we can't be too picky right?!

  17. Aren't all questions loaded? I guess my question should have been, what are the key positions that a small craft distillery needs to operate without having the owner burnout after year 1. 18 hours are to be expected for sure. In other words, 1 person (the owner) can do a million different jobs, that we all know, but what would be the first few positions to hire for to make life easier for the owner? We don't self distribute but we do have a tasting room where we will be able to sell to the general public (but not to businesses). Also, is there somewhere where i can find what salaries in the distillery marketplace?
  18. I'm working on the staffing portion of the business plan for a few years down the road. I was wondering what type of employees and how many you feel are necessary once you reach a few thousand cases/year? Thanks
