We will be pulling about 100-120 gallons of 190 proof on spirit runs and diluting to 80 for bottling. That will end up at about 300 gallons of bottle ready spirits. Would a 500 gallon tank be too big in terms of headroom? I'm concerned about evaporation if the spirit needs to sit in the tank for a day or two. In CA there is a very low limit for how much high proof booze you can store in a blending tank, without having sprinklers. In a building with sprinklers that number is significantly larger. At our place, we are sprinklered and have 2 500gal blending tanks. We keep the tanks sealed when they are sitting and waiting to be bottled. captnKB Posted May 4, 2015 Share Posted May 4, 2015 it depends on the booze. typically our whiskeys only fill the tank half way= equals lots of head space, our blending tank is half full. Our vodka fills the tank much fuller= less head space. Regardless ethanol fumes are heavier than air, thus unless a tank is seeing lots of air circulation it will not evaporate too much booze Link to comment Share on other sites More sharing options...
