  2. Realistically how important is "organic" considering we are refining out the fermented starches from the grain? Is there a drastic difference in flavor from general-use field corn/rye/barley compared to their organic counterparts? Surely whats left behind in the stillage is what everyone's concerned about when it comes to organic foods, right?

    Two general interests for organic seeking folks:

    1. tastes better

    2. produced in a more ecologically sensitive manner

    I would guess #2 is more applicable to spirits.

    That has got to be the worst distributor deal I have ever heard of. And they sound like bullshitters to boot. Why have the terms in there if they will readily ignore them?

    Distributors make money by taking orders and delivering products. More products, more orders. Any distributor who claims they're doing you a favor by delivering your product for a 35% margin is, quite frankly, an asshole.

    By and large they will not sell your product, they will take orders. You are not getting a sales force, you are getting delivery trucks.

    FYI it is not uncommon for distributors with contracts to buy product and sit on it, secure that no one else will sell your products and cut into their quotas with the big guys.

    btw, the state of the industry is that craft produced spirits are booming and in demand, not that there's too many around. *This doesn't apply to vodka marketing brands.

    talk with Mr. McKenzie over at Finger Lakes. I believe he is barreling right off of his continuous still. No doubler. And there at least a couple others that I've stumbled across that do it the exact same way.

    There are more and more of us out here every day, so be careful when you say a certain company is the only place in existence that does it one way.

  6. You'll get shot down by those who distill just as vehemently. The last thing I want is more regulation. For pete's sake, isn't there enough already? The market will sort out all, as you've just seen on the evening news. I will say it again as I've said before, you will not meaningfully increase sales volume by putting 'distilled by' on the label. The vast majority of consumers don't even know what that means. Go ask 100 random people what a distillery does, the majority won't know.

  7. The Novatech hydrometers I received do not have any corrections with them. The expensive Nist traceable ones came with a calibration document stating the corrections to use with the hydrometers.

    So how can one rely upon hydrometers without the corrections included? Inaccurate readings will result.

  8. Hydrometers = Novatech 6613 series IRS Hydrometers ... Get all 12 (0-206 proof) they come with a certificate of calibration , they are about $30 +/- each ... My TTB agent looked at them and said good enough ..... Novatech also sells NIST traceable thermometers ....

    How can you use hydrometers without the hydrometer corrections? You will not get accurate readings.

  9. Commercial caramel coloring is not caramel. That is just the name of the color. There is no flavor in the small quantities necessary for darkening rum. The caramel color companies will send you free samples to try.
