    Scales

    Just got a scale from Fred Herrmann at primeusascales. I got his info from an old post. He new what I needed and had it in stock. I have a new scale for the distillery. Deal was done in less then 15 min. Thanks to the old post and to Fred. John.
  2. So if I distilled an all malted barley mash / wort soaked it in oak chips. I could bottle it as an American single malt whiskey? Thanks for the reply's.
  3. I know I have seen it but I cant find it. How can a single malt whiskey be a whiskey without going into Oak barrels, just using wood chips. I did search and looked at standards but didn't find when you can call it single malt whiskey without a barrel. Thanks.
  4. Call the NCABC its not that hard just have to fill out forms. they will send you what you need. I can tell form you post that you have not been talking to the NCABC, and you will need a wholesale permit from the TTB but they are aware of what the NCABC wants and they what the state needs. I am more then willing to help. PM me or post here but you should really be working with the NCABC or you will not get very far. The NCABC has more paper work and fees the the TTB Yes if you look at the Broker list on the NCABC web site all NC Distillerys are self brokered.
  5. This might save my Distillery. It can easily be an excel spreed sheet. It is up to the distillery to keep the data and provide it to the ABC if needed. Not that much more then what you have to do for a tasting "check ID". Cant wait.

  7. Does anyone have calculator or a simple table for for filling weights of a 750 ml bottles with different proofs. The TTB tables are giving me an headache. Thanks John
  8. Rock bottom distillery Cowpens or Gaffney SC. I think they moved from the shed to a bigger space but they where is the small one for two years.

  10. I had the GREAT pleasure of finding and Getting to have a drink of a Distilled in the late 20's bottled in the mid 30's Haig & Haig. I do not know how much of the time in the bottle played but it was the most full bodied, flavorful, complex and the taste was changing every few minuets. Then adding a drop of water was to much. Anyway I have been thinking about it everyday since last week. Was it the grains, water, oak, master distiller cuts no computers or no columns. We did a side by side with a new bottle it wasn't even close. I wish I could and I will try to make something that good. I have never been a big Scotch whisky snob but the bar has been set really high.
  11. It is not that great but it works. It is to oaky / wood tasting to me but I am sure someone has figured it out.
  12. As long as you don't mess with it, It should be good for 5 days or so. You will know when it needs to be run before you are. It might start to get a whitish film on it "BAD" run ASAP. Or start to smell funky then Run it. I have racked and gone a week without either, and no problems. I have made runs with the film and it does change the mouth feel but not the flavor so much. It goes away with a second run. All done in pot stills. Just my 2 cents
  13. I push the heat as hard as I can without most of the fear of scorching to about 165. Then cut the heat way back turn off agitator and it slides into 180 or so and runs more or less for 4 hours. total time about 5 hours to 30%. I was getting close to 7 hours without agitator. I like direct fire pot stills and I dont rack the wash just strain the heavys. This is by far from any textbook but it works for me right now and might not for you.
  14. I can save an hour with mine. But I had to upgrade the heat supply to get the increase in heating. It will not help much if you can't push the heat.

  16. I just got my state permit. No more complaining time to get to work. Been waiting so long its like I know what to do but hands have been tied so long. First thing tomorrow morning I am going connect the still to the condenser and do a cleaning run.

  18. After 103 days. I am still waiting. I really don't understand the TTB. latest setback was "get this" 1.They needed to know what town the distillery would be in, It was on all forms and in the lease. What was the SF of the building, It was on all forms and in the lease. And for the really big one ??????? I did not describe the bathroom. WTF I put the size and marked on the layout drawing. All I could respond with was that it has a toilet, sink, mirror, and light. Has anyone else had this kinda what I would call BS questions / delays. This kinda stuff just really gets me down. I want to call my congress rep. But am told that would really make my life hell for years to come. If this is true then we have no recourse and must continue to suck up the bullshit.
