  1. what about Cane syrup or Panella as a base for your rum?
  2. you'll need to do some test batches and find what gives you the profile you want. many rum producers use ec1118- champagne yeast, but there are many other yeasts out there that can change the character of the spirit significantly. I've done some experimentation with DanstilL EDV 493, it makes a terrible white rum, but fantastic aged Navy rum, but it does need to age in the barrel longer than a rum made with ec1118. I've tried different wine yeast variants, and they all work with differing levels of success.

  4. would anyone even be interested in a professional grade 30 gallon still in the 10k range? I'm sure we can build it for that price range, similar specs to our 60, but scaled down. but we are a new and growing company, so we got to apply the funds where people are buying.

  6. simple upgrade, definitely worth the cost. TIG welded if you can, hard soldered works too.

  8. been looking into redesigning the 30 to be similar to the 60, with the water jacketing and a 6" copper column. but that puts us withing 2/3 the price range of the 60. it'd be difficult to justify the cost of a prototype unless someone absolutely "must have" one and put the cash down. it can be done, but for only a little more you can have 2x the still. Pricing on the 150 with swan neck without copper top is $24k just did this up earlier today for someone who was interested in such things. the 60 with gooseneck and thumper. could easily eliminate the thumper if you wanted just a regular poststill. as shown below, still neeed to get solid pricing on, but should retail for $18k

  11. if you are close to a livestock operation, many farmers would gladly haul away your spent grains.
  12. pictures taken during final assembly of the prototype at 2/3 power, from cold to plates filled and product coming off condender was 1hr 20. after finishing a run, dumping the spent wash and loading fresh wash in, heat up took 45min the thermal mass of the oil in the jacket really speeds up reheat.
  13. yes, the prototype is heading to Texas to make whiskey.
  14. seems to be common practice to use same equipment for gin/whiskey/vodka. but yes a thorough cleaning is in order when changing products. juniper oils linger and can ruin your whiskey or vodka.
  15. the oil from the botanicals will will coat your packing and be very difficult to clean. I would suggest removing the packing before running gin, it will be much easier to clean. Steve
  16. yes its difficullt so source 6" copper by the foot, at any price. I've sent a couple folks your way, hoping they didn't waste your time. Steve
  17. in my experience, Fancy makes a far nicer rum. But then again there are many different styles of rum. what you got in mind might be different than what I'd do. Don't discount yeast as a major contributor to the rum profile.
  18. I set mine to 0 degrees, nice mid point. at a certain point the heat of the vapor negates any noticeable reflux on a still this size. Now the Giant potstills of Scotland are large enough where the reflux does make a significant difference.
  19. never did build one yet. I'm working with a client currently on a variation. I have to versions, one with the top of the boiler in copper and the other with just the goose neck. I have pricing on the latter, but still discussing with the factory how to best build the one with the copper top.
  20. yes we can do any size, but we have designs ready to go for 150g, 300g, 600g and 1200g. all our designs are steam heated, with the exception of the 60 shown above and our 30 gallon with glass column.

For you folks that saw us at the ADI conference, you would have seen the prototype for this design. we're having several of these units built, and only the 1st one is spoken for at the moment. below are two pictures, first is a (very poor) picture of the prototype unit, which is on its way to Texas to make whiskey. the second is a rendering of the Hybrid version that we're building right now. Construction: Boiler, piping and accessories are all 304 stainless steel column / cap and riser system is all copper. Gin basket with 6" access hatch above boiler, Boiler has a fluid jacket for indirect heating, filled with food grade oil and heated by 3 electric elements with a total of 13500w control system requires 60amp 220v supply. 1.5 KW (2hp) agitator, 208v 3 phase price is $20,500
  22. we have our first Modular Vodka column Built and will en route to its new owner by end of week. based on our previous column designs, we tightened things up a bit more for height, and made it modular with 4 plates per section. Copper bubble caps and a CIP spray ball for each plate. turned out rather well I think. this column was built to fit under a 14ft ceiling limit - comes in at 13'-3"
