  4. We usually bottle within a few days to a week after distilling. Our still-strength gin is mixed very well with dilution water just prior to bottling. We have noticed no real discernable flavor difference in aging/resting after that.

  6. Most likely it will suck for the forseeable future. For the most part the folks here in my state have traded one monopoly (the state) for another monopoly (Costco, Safeway, et al). If one was to look at inventories currently carried by those types of stores, it does not forebode well for the craft producer. Another hit this does is it does not allow small artisan wine shops (due to the new 10K square foot requirement) to carry spirits, which would be a natural fit for craft made products.

  13. I make fantastic absinthe and gin using NGS, and you want to relegate distilleries such as us to the sideline? This is the definition (from Ralph) we should be looking towards "The proposed qualification for a "micro spirits producer" and membership in the new ADI will be the permit and an operating licensed DSP; that pretty much covers it. And if a producer qualifies for the discounted FET rate, that qualifies that producer as "micro"."

  15. I have personally spoken in person with Ted Breaux regarding this. The letter is genuine.
  16. The only reason for the prohibition against home distilling is "protecting the revenue" pure and simple. Making decent cuts is about all it takes to make sure you don't have dangerous levels of methanol. I'm all for home distilling being legalized to stand with home brewing and wine making.
