  4. We have several distilleries that have chicken wire from floor the ceiling around the still but they are in the same room as the bar/tasting room.
  5. Dehner- Great info. I plan to hold my day job for the first 6 months or so and then transition to full-time distiller. I have a day job schedule that helps give me more free time than most and that will help. The problem I have is I am doing this all on my own. I do not have a partner and wonder how many others on this forum have done it on their own? What equipment do you see as a must and what are things people are buying that they just do not need?
  6. What are the thoughts on being a distillery know for one line of product? Gin distillery? Rum distillery? Although it seems like a narrow approach I feel like it makes you stand out. That way you are know for your gin/rum and not a little bit of everything and can focus your sales approach.

  8. Not to hijack this thread but I think this goes hand-in-hand, how many months should you have money set aside for, after opening, to cover operating expenses? If it takes you a year to open and have product ready to sell should you have 6,12,18 months set aside to cover all expenses after that first year so that you do not fall victim to undercapitalization.
  9. I am looking for a system that I can use for filtering my city water for mashing (130 gal ferm tanks) . I came across this info and was wondering if anyone had any input on how well it would work. I have a small RO system for proofing. GAC (Granulated Activated Carbon) and KDF. KDF is a copper-zinc alloy developed by KDF Fluid Treatment Inc. (Three Rivers, Michigan). The alloy can reduce heavy metal ions such as copper, lead, mercury, and chromium to metal atoms, which electroplate onto the medium and are thus removed from the water. Beneficial brewing ions, such as calcium and magnesium, are not affected. The zinc in KDF will also reduce dissolved chlorine gas to chloride ions, relieving the GAC of some of the chlorine reduction burden.   10. 3dOg Do you know the section code that addresses volume amounts allowed for F1?
  11. So how many people are rated F1 with the IFC? What are your allowable quantities ? Once you bottle or barrel are those quantities exempt from the totals? We have hired an architect but they have never done a distillery before. They are saying that they think we have to be H2 and that bottles/barrels are NOT exempt from the volume totals. Any real world info would help a ton! We are in a building with sprinklers- Thanks for any help !!
  12. We are planning on doing this with our 130Gal still. At start-up its all about saving money! I agree with bluestar that you would not want to ferment in the still. Even if it is SS you would be tying up the kettle for too long.

  16. I am looking at this thread again and am wondering if the confusion is THE BAM says .2% by VOLUME not WEIGHT. Some are giving an example that they weigh the vodka and then add sugar as a percentage of the total weight of the vodka. That seems wrong. Can anyone that does this on a regular basis please explain exactly how you go about adding sugar/citric acid? Thanks in advance!!
  17. Does anyone know where to get the barrels some are using to showing the aging process? I have seen a few of these online where the wood heads are replaced with plexiglass so the customer can see the changes as the product ages. Very cool!

  21. Not to argue but do not waste the $7 for the one page "check list" from Dalkita. It is SO basic you will laugh. Just my opinion... I guess what bothers me the most is that they charge for the list. It looks like something they would put on their website for free that might get you to call/hire them for their guidance. I see a lot of law firms that do that and it gets you thinking about questions to ask them (while they charge you several hundred dollars an hour).
