  10. There is a Master distiller needed in Paducah Ky. Good salary and benefits with the proper qualifications. They would like 10 years experience in a distillery. They will pay relocating expenses also. If you interested send email to mike@hillbillystills.com and I will put you in contact with the correct people. This operation will consist of 3-1000 gallon batch stills and 2 - 300 gallon stills. These will be all be steam heated. They will be distilling from grain to glass. The 1000 gallon stills will be used for bourbon and rye whiskey. The distillery will be putting up 4000 barrels a year when in full capacity. The facility has pleanty of room to grow also.

Chattanooga Whiskey Company is in the process of hiring a DISTILLER/MAINTENANCE SPECIALIST for our new craft production facility in downtown Chattanooga, TN - Outside Magazine’s two-time “BEST TOWN EVER” winner. This facility has been operating since late March of 2017 and has already put away over 600 barrels of whiskey to date. The Vendome distilling system is comprised of a 12 inch, 30 foot column still with a doubler, beer well, 3000 gallon cooker and 4 x 3000 gallon fermenters. Our distilling team lives by the phrase “Rules are Good, Change Them”, so your attitude and training should reflect a respect for tradition but also an openness and willingness to innovate and continuously improve. Every day we try to do better than the last – which includes everything from the way you organize your workspace to how you clean a tank, to the way you approach building or executing a recipe. We want to build the best bourbon and whiskey possible, and our people (and their attitudes) are the most important ingredient to that recipe. We currently offer 1816 – an 8 year old, award winning, world-class, traditional bourbon blended and bottled by yours truly. In August 2017 we released the first batch of our single batch Experimental Series from our 2.5 year-old Experimental facility and tasting room on Market St. Some of those recipes have already "graduated" up to our larger facility on Riverfront Parkway. MAINTENANCE SPECIALIST / DISTILLER Qualifications: • Manufacturing experience, preferably in the food/beverage or distilling/brewing environments • Formal technical education or varied and extensive hands on experience in many trades (electrical, plumbing, mechanical) • Familiarity, knowledge or experience in the brewing/distilling trades • Proven ability to work with little to no supervision • Extremely detail oriented • Experience in MS Excel • Highly safety conscious with respect to equipment and lock-out procedures. Distiller responsibilities include all aspects of grain to glass production of whiskey: • Receipt of raw materials • Milling, mashing and fermentation management • Transferring of mash, fermentations, high wines, etc. • Distillation on continuous column still • Barrel filling, dumping, proofing • Bottling, packaging and shipping/receiving • Guiding occasional tours of the distillery • Inventory management and materials ordering • Single barrel micro distillery activities and shifts Maintenance-focused responsibilities include but not limited to: • Developing a maintenance schedule on crucial equipment as well as maintaining clean and well-stocked maintenance tools and parts storage. • Performing facility breakdown and preventative maintenance tasks for all electrical, plumbing and mechanical systems related to the distilling operation as well as those related to distillery functionality. These include but not limited to: o Cooling tower o Pumps and motors o Boiler o Chiller o Heat exchangers o Compressed air systems o HVAC o Electrical components – drives, transmitters, etc. o Plumbing components – water (city, cooling tower, chilled) • Building, welding, painting, and plumbing activities related to improving existing systems • Teaming with other production staff to encourage proper use and care of all equipment. We are looking for someone who is as excited and as motivated as we are to build a lasting name and quality spirits from the ground up. The ideal person for this position is a skilled distiller who knows their way around fermentation; someone who can see a quality product through from sourcing all the way to bottling; who has an intuitive understanding of the processes involved in and the chemistry behind brewing and/or distilling. The work is hard and there is a lot of it, but at the end of the day it is very rewarding and you will have something to show for it. You will have created something truly unique. This venue will house a 10BBL 3 vessel brewhouse, 1000L pot still, 200 seating restaurant and a “entertainment venue” with an occupancy totaling 1175. ABOUT THE POSITION: This is an exciting opportunity for someone that has a passion for quality craft beer/spirits and can navigate a startup business. We’re looking for someone to help us build systems and processes on a new 10 BBL brewhouse and 1000L pot still. The right candidate will be creative, safety-minded, efficient, quality-focused, possess a great work ethic, a positive attitude, and be a team player. As part of the management team, the Head Brew-Stiller will be expected to contribute to our continued growth, constantly displaying a high level of maturity, responsibility, and pride in our work. You will have the opportunity to show your creativity by making exceptional beers/spirits. RESPONSIBILITIES: The Head Brew-Stiller is responsible for the brewing operations; including brewing, fermentation, cellaring, and packaging. Distilling operations; milling, mashing, distilling, tasting, proofing, blending and bottling. Other duties include but are not limited to: • Develop new recipes and improve existing recipes with input from owners • Set the brewing/distilling schedule and maintain inventories of raw materials and finished beer/spirits • Manage yeast per best practices and industry standards, including pitching, cropping, and monitoring yeast • Ensure the highest quality and consistency through use of best practices, including lab tests to monitor and troubleshoot fermentation, in-process, and finished beer/spirits • Cleaning and sanitation of all equipment and work areas • Ensure product quality in the pub by helping clean lines, checking CO2, etc.; work closely with pub staff and provide training about beer/spirits knowledge • Perform equipment maintenance, troubleshooting problems that arise, and repair as needed • Help maintain and develop additional standard operating procedures that ensure all aspects of beer/spirits production and packaging align with safety, sanitary, and quality protocols while allowing for process improvement and workflow efficiency Be an active brewery representative, including attending promotional events and festivals, occasionally participating in tours and other educational and marketing events Assist the owner and other team members in developing growth strategies; assist in hiring and training brewery/distillery employees; effectively communicate (written and oral) with the owners, staff, sales team and others to create a supportive work environment QUALIFICATIONS: • 5 plus years professional experience as a production brewer/distiller • Formal brewing/distilling training (certificate/diploma) from a recognized and accredited brewing/distilling program (Siebel, UC-Davis, etc.) is a plus • Strong knowledge of brewing/distilling techniques, quality control, lab analytics and interpreting the results, yeast management, cleaning and sanitation, cellaring and packaging, and equipment • Experience in recipe formulation and development; a high degree of curiosity to use new ingredients and flavor combinations • Knowledge of developing and documenting formalized Standard Operating Procedures (SOPs) for all processes • A commitment to safety and quality by following industry standards, best practices, and OSHA regulations and requirements • Strong organization and time management skills and attention to detail; ability to multi-task; flexible schedule which includes nights and weekends as needed • Ability to work well as a member of a team and also independently • Strong oral and written communication skills and ability to give and take constructive feedback • A friendly attitude and willingness to interact with customers in the pub and at festivals and events Strong work ethic and flexibility as the brewery expands COMPENSATION: This full time position pays a competitive salary with benefits, sick leave, paid vacation and all your favorite beer/spirits/live music in one place. JOB DETAILS Responsible for the entire distilling and quality control process, therefore should be well versed in scheduling distilling and fermentation, aging and packaging operations. Job Responsibilities: Milling – corn, rye, barley, wheat and ensuring proper grind size for each recipe/from batch to batch. Mashing - maintaining consistency & implementing changes in controllable way Distilling – stripping and rectification.
