  1. I have a distillery making whiskeys, rums, and a vodka. I have another company red boot stills. we do a lot more than just build stills. we do 1, consulting from start up and beyond 2, logo and label design and marketing with in house design team 3. custom equipment 4. build stills and very soon-bottling machine and labeling machine you don't need the ferment guy! I use lallemand they can help you with any thing. then i use "specialty enzymes" to max out the yield. they are both great companys! take care! joe dehner 515-559-4879

I don't think I would ever pay for a "fermentation engineer" There a lot of variables but there are so many resources out there! I use "lallemand", they can help you with anything. They are the best!   6. Look, I love my continuous still and my refraction still. To each his own. I don't have tons of time for a pot still and also to redistill several times. That's my 2 cents. Take care!
  7. Go to "usedstainlesssteelbarrel.com" and get a 55 gallon barrel for your boiler. The size your saying is so small to even be worth it. For the money that your pay for your small boiler you could get a 55 gallon stainless drum and modify it. Think that a normal charge is 80% of full capacity. That's my two cents. I started my distillery with only $28,000 and $12,000 of that went to pay my rent. I am a master at shaving cost.

  9. In Iowa we don't get inspected by the state food or health inspector. They leave it up to the ttb. Maybe see who the state food inspector is because they will trump the local guy. I wish you luck. Let me know if I can help.
  10. I have no clue why they care about your mash water. Your going to mash a liquid. And then you're going to boil the alcohol off of it. Why does it have to be sanitary for them? Because even when you thin down your alcohol before you bottle at the alcohol will kill anything in the water.
  11. I am helping another brand startup at my distillery. I will be doing contract bottling and heat tunnel work for them. But my question is " how much should I charge for the label and formula approval, and help getting them setup"?
  12. Who makes this bottle? or really what I'm looking for is who is the manufacturer that has the symbol? The symbol on the bottom of the bottle looks like an upside down horseshoe with the top kind of Curvey. Or almost like an Omega sign.
  13. depends on what type of wash. for rye or barley wash more than you would use on lets say corn. I use "frem cap s" on corn about 8ml +-, and on rye or malt about 20-24ml +-.
  14. if you have 12" choice .... go with the 12" over the 8" now. it will save you money in the long run.
  15. with the right amount of silicon I can fill my still all the way up. about a 95% charge to my cap. 80% is always rule of thumb for filling
  16. also you would need to know lots of things like heat input and dia of the pot, charge cap of pot,design of trays, what type of trays, how is reflux set up, dephlegmator, and what you are trying to distill. everything your saying is so open ended. like asking how many mpg can a car get... be super specific so we can help just trying to help.

  18. I personally have a 125 year old recipe from Cuba for clear and black rum. I'm not tiring to upset you but I don't think anyone is just going to give up a recipe. You are going to have to do your research and piece together a recipe like a crime scene investigator. Just try and think of all the ingredients and processes and equipment rum makers had 100-200 years ago. Remember 99.99% of the time people over think this.
  19. Craftersglass: I got your email and it looks like you guys do awesome work. But to try to sell at my price it is way to much money. I'm go the start making the rum for $3.40 a bottle, and that is with the $2.14 fed tax.   20. In about a month or so. Red Boot brand name Havana Judge Rum It's a 125 year old recipe my family had that originated from Cuba. It came from a relative of mine that had a cigar factory in Burlington, IA in the late 1800's . One of the cigar he made was called "Havana Judge". He use to get some of his tobacco from Cuba and some of the shipments contained bootlegged rum and after a while he was able to get the recipe. I'm super excited about the new product.
  21. Watch your "pressure drop" . And big is your pot? What's the diameter?
  22. It takes a hell of a lot of bottles to pay that money back. I think it is all ways easier to start small and go big later. Besides know one wakes up and instantly has a super product.
